apple, pecorino & taleggio pizza with honey & sage
glenna from a fridge full of food (that sounds good!) is hosting this weeks weekend herb blogging and this time i am cooking with sage. sage is - like so many other herbs - a wonderherb. it's got antiseptic powers, a sage tea is a great medicine if you got a funny tummy and also good if you have a sore throat. some people say it's good for brain activity. i eat loads of sage. but have to report that nothing ever happended up there...
i find sage just the perfect herb for cheese (apart from thyme of course!) and it goes so wonderful with apples, pears and honey as well. so i just combined everything and put it on top of a pizza: so here is my apple, pecorino and taleggio pizza with honey and sage.
taleggio is not excatly my favourite cheese - i just find it such a stinky cheese, god lord i can barely open my fridge when some in it. but it melts just so wonderful and is a delicious combination with sage and the apples - it just had to be on this pizza (which is inspired by the pear & taleggio pizza from maxine clarks "pizza, calzone & focaccia").
for the dough:
12g fresh yeast
1/2 tablespoon sugar
1/2 teaspoon salt
125ml lukewarm water
about 1/2 tablespoon olive oil
in a glass cream yeast with water and add olive oil. mix flour, sugar and salt in the bowl of a standmixer and make a well in the centre. pour in yeast-mixture and mix together until very smooth and elastic. put in clean bowl, cover and let rise for about 1,5 hours.
heat oven to 220c°
uncover dough, punch out air, then tip out onto a lightly floured surface. roll into a 25cm circle (do this directly onto a nonstick parchment paper). rub pizza base with a little olive oil scatter over the taleggio cheese, then the apples, then sage and pecorino. drizzle honey and a little more olive oil.
slide pizza (on paper) onto the hot baking sheet. do this quick, quick & bake for 5 minutes. then carefully slide the baking parchment away from the pizza and bake for another 15 minutes, until crust is golden and cheese has melted and is bubbling. sprinkle with freshly ground pepper, drizzle some more honey on top and eat immediately.
